Lemon bundt cake

I made this cake when I didnt want to go through accurate measurements for cake baking but at the same time bake something good.
Inspiration for this cake comes from the  cup cake I used to eat get in India in local bakery shops.  The moist vanilla cake plus coffee :) :)
 I have modified recipe to make sure its healthier compared to normal cake recipes.

I used bundt cake pan to bake this cake.

Njoy it with coffee .
Before Cooking - 
2 Cups of all purpose flour
1 cup of brown sugar. ( I used 3/4 cup to make it less sweet) 
3/4 cup of clarified butter (ghee) - heated slightly to attend liquid form 
3 large eggs 
1/2 tea spoon salt 
1 tea spoon vanilla essence (if you dont want to have only lemon taste) 
1 tea spoon baking powder
1/2 tea spoon of baking soda
lemon zest - for 1 mid size lemon . ( make sure you grate this only before adding it to the final batter. Dont grate it and keep for long) 

Get your apron ready .

1) Start oven to preheat at 350 degree.
2) In the big bowl sift all purpose flour. Add 3 eggs, sugar , vanilla , melted ghee (Not too hot)  , salt together. Add 2-3 spoon of miilk if you think the mixture is too thick. Mix it with egg beater until all lumps are gone and all ingredients are mixed. 
3) Add baking soda  , baking powder . Mix again . 
4) Add lemon zest. 

Line the bundt cake pan with oil and all purpose flour. 
Pour cake batter and bake it for 30 min.
After 30 min check with a toothpick if its baked.  if yes take out and njoy  . and send me a big piece of it :P
