Paella

This is my version of Paella.

Before cooking :-
1 cup of rice . ( spanish is preferred.otherwise regular medium grain size.)

4-5 olives
1 spoon paprika (if not the red chilly powder) 
3-4 cloves of garlic
vegetables - eggplant,zucchini,cauliflower,peas,carrots,potatoes.. all square pieces
1 onion
2 tomatoes pureed or small pieces.
parsley few strands
coriander leaves.

Spice- rosemary,thyme ,oregano fresh or dried. if dry - 1 spoon each.
Ginger - grated 1 spoon,
1 table spoon olive oil
Vegetable/chicken stock
saffron strands 7-8
salt

Note- If you are using chicken marinate it with pepper,salt,ginger and garlic. Saute it separately to get half cooked.
add it instead / with vegetables and increase the cook time .

Get your apron ready :P

Pick a big bottom vessel..  or which is similar to big frying pan.. Sufficient to hold cooked rice and vegetables.
Add olive oil. When heated add garlic ,onion saute for 2 min.
Add ginger and tomato puree saute for 3-4 min.
Add vegetables and rest of the spices. Saute for 5min.
Add salt.
Add vegetable stock . when it comes to a boil spread the soaked rice in the pan.
Add saffron strands .
Cover the pan with lead and let it cook for 15-20 min on medium-low flame.
When rice is cooked. Served with coriander and parsley leaves.
